In a bowl add the yeast, sugar, and the cup lukewarm water. Mix until everything is dissolved. Then add 1/2 Cup flour and mix together. Leave the bowl uncovered for about 15 minutes.

After the time has passed add in the salt, olive oil, and 2 cups flour and knead the dough. Once kneaded, let the dough sit for 10 minutes before kneading again for several minutes. Coat a bowl lightly in olive oil, put the dough in the bowl and cover for 1 hour.

After the hour is done, preheat the oven to 475℉.

Divide the dough into 8 balls of roughly the same size, flour your work surface and using a rolling pin roll the dough out till they are roughly 1/4 inches thick.

Once the oven is preheated, put as many rolled out pieces as you can on a baking sheet or baking stone. Let bake for two minutes on one side, flip, and then bake for another minute before taking the pita out. Repeat until all pita is baked.
